Grilled Asparagus Salad with Grapefruit Fennel VinaigretteGrilled Asparagus Salad with Grapefruit Fennel Vinaigrette


  • 1 Bunch of Asparagus
  • 1 Sage Farms Butterhead
  • 1 Large Grapefruit – both zest and fruit
  • 1 Fennel Bulb – finely sliced – plus the fronds chopped too
  • 1/3 cup MECCA Fused Fresh Fennel Oil
  • 1/4 cup MECCA Grapefruit White Balsamic Vinegar
  • 1 Shallot chopped finely
  • 2 Tbs Ginger – freshly grated
  • 1 Tbs Local Honey
  • GARNISH Grapefruit Rosemary Finishing Salt
  • Freshly Parmesan for finishing

To Make:
Preheat the grill to medium high heat. Trim the asparagus and brush lightly with oil and top with a generous sprinkle of GARNISH salt. Place asparagus directly onto the grill. Turning every couple of minutes, asparagus should be done in 10 minutes or less. Remove and set aside.

For the dressing, place the zest of 1/2 a grapefruit, the finely chopped fennel fronds, the finely chopped shallot, the freshly grated ginger, the honey, oil and vinegar into a small mixing bowl. I used one of the new bowls my sweet kids gave me for Mother’s Day. I am not sure if you know this about me or not – but I LOVE BOWLS!! Mix thoroughly and finish with a generous pinch of GARNISH salt. Set aside.

Next, using a sharp knife, cut and remove the pith and skin from the grapefruit – leaving only the pretty pink center. Then slice it into ¼ inch slices. Next, in order to prep the fennel for slicing, first cut off the top and discard. Then, slice it in half and remove the visible core. From there, it will be easy to slice into paper thin shreds. Lastly, wash and dry desired amount of butter head.

To assemble the salad, arrange the butter head in a fan like fashion and top with a few slices of grapefruit. Place a small pile of the sliced fennel and shallots on top of the grapefruit slices and drizzle generously with the AMAZINGLY fresh and delicious vinaigrette. Then place some asparagus on the plate and drizzle more of the heavenly dressing on top of it. Finish it by sprinkling a bit more of the fronds and top with some freshly shaved parmesan if you have any on hand. If not, not to worry – it will still be incredible! This is such a perfect summer salad – I hope you will enjoy this as much as I did! YUM!
