Avocado, Orange, and Butterhead Salad – with Honey Ginger dressing.
For the Salad:
- 1 Head of Sage Farm’s Butter Lettuce
- 2 Avocados
- 2 Oranges – or 4 Halos – whichever you have on hand
- ½ Red Onion – sliced thinly
- 1 Tbs chopped fresh mint leaves
- 1 Tbs chopped fresh cilantro
For Dressing:
- 1 Tbs grated fresh ginger
- 3 Tbs Mayonnaise
- 1 Tbs Dijon Mustard
- 1 Tbs Honey
- 2 Tbs Olive Oil – I used MECCA’s Blood Orange infused Oil
- ½ cup Orange Juice
- Salt and Pepper to taste
- Mix all ingredients together and set aside
To Assemble:
Use the leaves of an entire head of Sage Farm’s Butter Lettuce. Arrange prettily to cover the base of the serving dish of your choice. Next, Peel and segment the oranges – removing as much of the pith as possible. Then cut each segment in half and arrange on top of lettuce leaves. Follow this with the placement of the thinly sliced red onion. Next, peel and chop the avocados and place in the center of the salad. Then sprinkle the finely chopped mint and cilantro evenly over the top of the entire salad. Lastly, drizzle the dressing over the salad and ENJOY!!!!!
